Instant Oatmeal Raisin Cookies

I love cookies! And I just love making them!!
It’s funny, because when I’m at home, and I have the urge to bake something, I always open my kitchen cabinet with the hope to have all the ingredients that I need!
As a baker I try to have most of the basic ingredients;  flour, sugar, eggs, butter, baking powder..
But most of the time I have to make magic and use the ingredients that I have to find the right  recipe.. (BTW.. when this happens I’m too lazy to go to the supermarket, and if I go, sometimes this urge disappears..).
The other day I was craving Oatmeal and Raisin cookies… but there was no oatmeal in the cabinet..
But wait!! I found a box of instant oatmeal!! Yay!  All I needed to do was adjust my recipe, add a little magic and voila! Delicious oatmeal raisin cookies.
It was really easy, fast.. and delicioussss…

Apple Cake

 

Apple cake – the traditional American dessert can sometimes really surprise you. Today I will share this surprise with a new apple cake recipe.

I had a bowl of some fresh apples which I kept around for later use, and I decided to make a fresh apple cake.

The apple cake recipe is easy to follow and the cake smells really good when in the oven. After cooling down, I opened the cake and filled it with honey cinnamon frosting. Time for a first bite!

And the first piece was gone in a minute, and the second piece.. and the third piece..  It’s better for me to stop here!!

I have to say that I can’t wait to make this cake again! I hope its soon, its absolutely delicious!

One of my most favorite things during summer is to meetup with my friends for a nice summer picnic.

This past weekend, there was a cupcake picnic sponsored by the blog Cupcakes Take The Cake, one of my favorite websites. The picnic was a lot of fun and had some really yummy cupcakes made by a variety of bloggers, bakers and food enthusiasts. It was a lot of fun meeting the owners of the website as well as other people who baked these delicious treats.

So what did I bring to the picnic? Nothing less than Watermelon cupcakes! I wanted to make the cupcakes to look like a watermelon, and also to have a rich and juicy ‘melony’ flavor. Here’s my recipe for this summertime treat, Watermelon Cupcakes!

When I heard about this new challenge, I was ecstatic since I enjoy participating in such events. Not only do I get to create vibrant and yummy cupcakes, I get to eat them as well! Talk about a win-win situation!

The cool part about such challenges is that it gives each participant  a chance to develop and come up with new ideas, designs and recipes. This is especially important for me since I have always loved creating new products, not only with baking but also with cosmetics. My past job involved creating and designing new cosmetic products which like baking, require much creativity and imagination.

Since I started my sweet journey in the cupcake world I always wanted to participate in a Cupcake Challenge!! When I saw this one, on the Sweetest Kitchen Site, I thought this one was perfect!

Then I spent my days brainstorming…  Which flower should I use?? What flavors? Colors? And the other day I found this really nice store…  Sahadis on Brooklyn!! I loved there!And found so many great things.

So, for this challenge I bought: Hibiscus dried flower, Rose Petals preservers and Orange blossom water!

Ingredients that we can find all year, not only on Spring time,  and that’s perfect!

I spent almost all day making this cupcake, and look what I got:
